To prepare the base, beat the cream and egg yolks together.
Add the butter to the flour and rub in with your fingertips until the mixture resembles coarse breadcrumbs.
Add the cream mixture and use a knife to mix it in until the dough becomes elastic.
Refrigerate until cold.
Roll the dough out onto a floured surface and cut out circles to fit greased patty pans.
Spoon a teaspoonful of jam into each pastry base.
To make the filling, beat all the ingredients together well.
