    self-raising flour

    salt
  • 50
    ml
    custard powder
  • 60
    g
    sugar
  • 100
    g
    coconut
  • 1
    extra-large egg
  • 2
    ml
    vanilla essence
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Sift the dry ingredients together in a mixing bowl and add the remaining ingredients. Mix well and place the dough on a lightly floured surface. Roll into a rectangle about 3 mm thick and cut out cookies with a cookie cutter. Place on a greased baking sheet and bake for 10-12 minutes or until the cookies are straw coloured. Cool on the baking sheet before transferring to a wire rack to cool completely. Store in an airtight container. Makes about 60 cookies.
