Coconut cake with lime drizzle icing

    lime peel, finely grated

    castor sugar
  • 4
    eggs

    ml
    desiccated coconut
  • 250
    ml
    cake flour, sifted
  • 5
    ml
    baking powder, sifted
  • LIME DRIZZLE ICING
  • 250
    ml
    icing sugar, sifted
  • 65
    ml
    lime juice
  • 190
    ml
    water
  • TO GARNISH
  • 125
    ml
    lime peel, cut into slivers
  • 125
    ml
    coconut shavings
 

Method

about 45 minutes
 
Preheat the oven to 160 °C.
Place butter, lime peel and castor sugar in the bowl of an electric mixer and beat until light and creamy.
Add the eggs one by one and beat well.
Fold through the coconut, flour and baking powder.
Pour the mixture into a greased 20 cm loaf pan, and bake for about 45 minute or until a skewer inserted in the middle comes out clean.
LIME DRIZZLE ICING:
Mix together icing sugar, lime juice and water and stir until smooth.
Drizzle over the cooled cake.
Garnish with lime slivers and coconut shavings.
