Ingredients (9)

250 ml flour — cake
125 ml brown sugar
100 ml muscovado sugar
100 ml cocoa powder
3 ml Baking powder
150 ml rice milk — or coconut milk
125 ml canola oil
10 ml vanilla — essence
120 ml dessicated coconut

Method:

Preheat the oven to 175°C.

Mix the flour, sugars, cocoa, baking powder and 2ml salt in a large mixing bowl. Make a hollow in the centre.

Pour the rice milk, oil and vanilla into the well and slowly mix the dry ingredients into the liquid. Stir until just combined. Add the coconut and fold it in gently until just combined. Pour into a greased and lined square baking tin and bake for 25 to 30 minutes. Cool in the tin and cut into squares.
