Ingredients (8)

1.00 baguette — sliced
50.00 ml butter — soft
400.00 g coconut milk
250.00 ml milk
1.00 lemon — zest and juice
50.00 ml brown sugar
3.00 eggs — large, slighly beaten
50.00 ml desiccated coconut

Method:

Preheat oven to 160 ºC. Spread a little butter on each slice of bread. In a greased ovenproof dish, arrange the bread slices so that they overlap.
Whisk remaining ingredients together (except for the desiccated coconut). Pour over the bread and leave to soak for 5 minutes.
Sprinkle with the coconut, then bake in the oven for about 40 minutes until set and golden. Serve with fresh fruit on the side. Serves 4.
