Coconut bread pudding

    small French loaf, sliced

    coconut milk

    small lemon (rind and juice only)

    large eggs, lightly beaten

    desiccated coconut

Preheat oven to 160 ºC. Spread a little butter on each slice of bread. In a greased ovenproof dish, arrange the bread slices so that they overlap. Whisk remaining ingredients together (except for the desiccated coconut). Pour over the bread and leave to soak for 5 minutes. Sprinkle with the coconut, then bake in the oven for about 40 minutes until set and golden. Serve with fresh fruit on the side. Serves 4.
