Coconut bread pudding

    slices white bread, crusts removed and cut into pieces
  • 375
    ml
    hot milk
  • 80
    g
    coconut
  • 3
    eggs
  • 300
    g
    sugar
  • 5
    ml
    vanilla essence
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease a 1,5 litre ovenproof dish with butter or margarine. Soak the bread in the milk for about 20 minutes and mix in the coconut. Whisk the eggs, sugar and vanilla essence together and pour over the bread mixture. Mix and pour into the ovenproof dish. Bake for 25-30 minutes or till set. Serve with custard. Serves 4-6.
