Ingredients (6)

2.00 melon
2.00 papaya — peeled
50.00 g dessicated coconut
400.00 ml coconut milk
350.00 g grapes — green
fresh mint — to decorate

Method:

1. Cut a thin slice off the ends of both melons, then cut in half and remove seeds.
2. Scoop out the flesh, being careful not to make a hole at the bottom. Cut flesh into large chunks.
3. Peel pawpaw, cut in half, remove seeds then slice. Mix coconut into coconut milk, gently stir in the fruit.
4. Divide the mixture between the melon halves, decorate with a sprig of mint.
