Coconut-and-pumpkin noodles

Ingredients

    ml
    red curry paste
  • oil for frying
  • 400
    ml
    coconut cream
  • 500
    g
    pumpkin
  • 1
    Litres
    chicken stock
  • 1
    stalk
    lemon grass
  • 2
    onions
  • 2
    sticks
    celery
  • 5
    ml
    ground coriander
  • 5
    ml
    ground cardamom or 6 crushed pods
  • 500
    g
    noodles
  • onion slices
  • red chilli slices
  • fresh coriander leaves
 

Method

25 minutes
 
In a pan, fry curry paste with a little oil until fragrant.
Mix in coconut cream and pumpkin.
Add remaining ingredients except noodles, fried onion, chilli and coriander.
Bring to a simmer and cook for 25 minutes, or until pumpkin is soft.
Put the noodles in individual bowls, spoon over the pumpkin mixture and sprinkle with fried onion, chilli and coriander leaves.
