Ingredients (15)

10.00 ml curry paste — red
oil — for frying
400.00 ml coconut cream
500.00 g pumpkin — cubed
1.00 Litres stock — chicken
1.00 lemongrass — white part only, sliced
2.00 lime leaves — kaffir
2.00 onion — sliced in half moons
2.00 celery stalks — sliced
5.00 ml coriander — ground
5.00 ml cardamom — ground
500.00 g noodles — cooked
onion — sliced, fried
red chilli — sliced
fresh coriander

Method:

1 In a pan, fry curry paste with a little oil until fragrant. Mix in coconut cream and pumpkin. Add remaining ingredients except noodles, fried onion, chilli slices and coriander. Bring to a simmer and cook for 25 minutes, or until pumpkin is soft.
2 Put the noodles in individual bowls, spoon over the pumpkin mixture and sprinkle with fried onion, chilli slices and coriander leaves.
Serves: 4
Preparation time: 10 minutes
Cooking time: 25 minutes
