Coconut and pumpkin noodles

    red curry paste
  • oil for frying
  • 400
    ml
    coconut cream
  • 500
    g
    pumpkin, cubed
  • 1
    Litres
    chicken stock
  • 1
    stalk lemon grass, white part only, sliced
  • 2
    kaffir lime leaves
  • 2
    onions, cut into thin half-moons
  • 2
    sticks celery, sliced
  • 5
    ml
    ground coriander
  • 5
    ml
    ground cardamom (or crushed pods)
  • 500
    g
    noodles, cooked as per packet instructions
  • onion slices, fried crisp
  • red chillies, sliced
  • fresh coriander leaves
 

Method

25 minutes
 
1 In a pan, fry curry paste with a little oil until fragrant. Mix in coconut cream and pumpkin. Add remaining ingredients except noodles, fried onion, chilli slices and coriander. Bring to a simmer and cook for 25 minutes, or until pumpkin is soft. 2 Put the noodles in individual bowls, spoon over the pumpkin mixture and sprinkle with fried onion, chilli slices and coriander leaves. Serves: 4 Preparation time: 10 minutes Cooking time: 25 minutes
