Coconut and lemongrass soup

  • oil for frying
  • 2
    cloves garlic
  • 2
    stalks lemongrass
  • 5
    ml
    turmeric
  • 650
    ml
    chicken stock
  • 400
    g
    coconut milk
  • 2
    limes, juice
  • salt to taste
  • 5
    ml
    white pepper
 

Method

 
Heat oil in pot and sauté garlic and lemongrass until fragrant.
Stir in the turmeric and add stock and coconut milk.
Bring to the boil and allow to simmer for 15 minutes.
Add lime juice, season to taste and strain.

Chunky additions: fresh coconut shavings, baby tomatoes, button mushrooms, fresh coriander, cooked chicken breast strips or prawns.
