Coconut Mealiemeal With Corn And Coriander

    mealie meal
  • 2
    ml
    bicarbonate of soda
  • 450
    ml
    coconut cream
  • 600
    g
    sweet-corn kernels, cooked and drained
  • 120
    g
    cold unsalted butter, cubed
  • 10
    ml
    freshly chopped coriander, to garnish
 

Method

1. Heat 375ml water in a large saucepan and season with salt.
2. Stir 375ml cold water into the mealie meal to make a paste. Whisk the paste into the hot water, add the bicarbonate of soda and coconut cream, and bring to the boil, stirring continuously. When it boils, reduce the heat to simmer. Stir continuously with a wooden spoon until it thickens. Continue to stir for about 15 minutes, or until cooked.
3. Remove from the heat and stir in the sweet corn and cold butter until the butter has melted.
4. Season and sprinkle with coriander.
