Coarse tomato salsa

    tomato sauce
  • 50
    ml
    apricot jam
  • 70
    ml
    chutney
  • 10
    ml
    soy sauce
  • 15
    ml
    white vinegar
  • 50
    ml
    olive oil
  • 1
    onion, sliced into thick rings
  • 5
    ml
    masala
  • 2
    tomatoes, peeled and coarsely chopped
 

Method

 
Place the tomato sauce, jam, chutney, soy sauce, vinegar and olive oil in a food processor and process until smooth. Pour into a saucepan and bring to the boil. Reduce the heat and leave the sauce to simmer. Heat a little olive oil in a large pan. Rapidly fry the onion rings for a few seconds until glossy but still crisp. Add the masala, stir-fry for another few seconds and then stir in the tomato sauce mixture. Finally, add the chopped tomato and heat through. Serve with fried chicken or fish. Makes 500 ml (2 c) salsa.
