    butter, lightly chilled
  • 3
    sliced Italian-style bread
  • 9
    thin slices chicken breast
  • 30
    creamy mayonnaise
  • 3
    watercress sprigs or delicate lettuce leaves, such as oak leaf or frisée
  • 6
    medium slices of tomato
  • 5
  • salt and milled black pepper
  • 6
    slices hard-boiled egg
  • 6
    rashers streaky bacon, crisply fried


1. Butter the bread slices generously and evenly. Place 1 slice, buttered side up, on a working surface. 2. Cover the slice of bread with chicken slices. Dab the mayonnaise on top and cover with watercress sprigs. Cover with a second slice of buttered bread, buttered side up. 3. Layer the tomato slices on top, then sprinkle with sugar, salt and pepper. Add a few watercress sprigs and egg slices. Place the bacon on top, then the last slice of bread, buttered side down. 4. Secure the corners of the sandwich firmly with cocktail sticks. Using a sharp knife, slice sandwich down the centre. Serve as a light lunch, with coffee, or with hot soup as a simple supper.
