Cloudy Potatoes

    kg
    medium potatoes, peeled and quartered
  • 5
    ml
    salt
  • 45
    ml
    butter
  • 15
    ml
    chopped fresh parsley

1. Place the potatoes in a saucepan and add salt. Add enough boiling water to just cover the potatoes, and cook over a medium to high heat until the potatoes are tender and all the water has evaporated ? approximately 25 minutes. The potatoes should still be firm, but must start crumbling around the edges. Drain any excess water, if necessary.

2. Add the butter and parsley and season well with freshly ground black pepper, then put the lid on. Shake the pot vigorously until the butter has melted and the potatoes have a cloudy appearance.
