Citrus créme brulee

  • 375
    ml
    cream
  • 80
    ml
    sugar
  • 5
    ml
    very finely grated orange rind
  • 3
    ml
    very finely grated lemon rind
  • 5
    ml
    vanilla essence or seeds of one vanilla pod
  • 1
    ml
    salt
  • 4
    egg yolks
 

Method

+/- 40 min
 
Preheat the oven to 160 ºC and spray four glass ramekins or small dishes with non-stick spray or butter lightly.
Beat all the ingredients together and pour into the ramekins.
Place in an oven tray filled halfway with boiling water and bake for about 40 minutes until set.
Cool slightly and serve as is or sprinkle with a little brown sugar and place under the heated oven grill until the sugar has melted. Serves 4.
