Ingredients (13)

8.00 chicken breast fillets — cut into strips
30.00 ml oil
30.00 ml butter
1.00 onion — finely chopped
30.00 ml flour — cake
250.00 ml orange juice
1.00 lemon — small, juice only
150.00 ml stock — chicken
30.00 ml marmalade — orange
125.00 ml cream
2.00 ml dried tarragon
salt
black pepper — freshly ground

Method:

Season the chicken with salt and pepper and fry in oil until brown. Remove from the pan and keep warm.
Melt the butter in the same pan and sauté the onion until soft. Add the cake flour. Stir to form a smooth paste and remove from the heat. Add the orange juice and stir well. Return to the stove and heat until the sauce thickens. Add the remaining ingredients and add the fried chicken strips. Reduce the heat and simmer until the meat is tender and done, about 15-20 minutes. Serve with pasta or rice. Serves 8.
