Citrus chicken

    chicken breast fillets, cut into strips
  • 30
    ml
    oil
  • 30
    ml
    butter
  • 1
    onion, finely chopped
  • 30
    ml
    cake flour
  • 250
    ml
    orange juice
  • 1
    small lemon (juice only)
  • 150
    ml
    chicken stock
  • 30
    ml
    orange marmalade
  • 125
    ml
    cream
  • 2
    ml
    dried tarragon
  • salt
  • freshly ground black pepper
 

Method

15-20 min
 
Season the chicken with salt and pepper and fry in oil until brown. Remove from the pan and keep warm. Melt the butter in the same pan and sauté the onion until soft. Add the cake flour. Stir to form a smooth paste and remove from the heat. Add the orange juice and stir well. Return to the stove and heat until the sauce thickens. Add the remaining ingredients and add the fried chicken strips. Reduce the heat and simmer until the meat is tender and done, about 15-20 minutes. Serve with pasta or rice. Serves 8.
