Citrus banana pancakes

  • FILLING
  • 200
    ml
    orange juice
  • 15
    ml
    honey
  • 1
    orange, thinly sliced peel (optional)
  • 3
    large bananas, sliced diagonally
 

Method

 
Make your own pancakes or buy them readymade. FILLING: Place orange juice, honey and orange peel in a large pan, bring to boil and cook briskly, uncovered, until reduced by half. Reduce temperature and add bananas. Cook for a minute or so, until tender but still firm. Place a large spoonful of banana mixture into centre of each pancake and fold pancakes into quarters. Spoon remaining citrus sauce over and serve hot with cream or ice cream.
