Citrus-baked haddock

  • 1
    lemon, sliced
  • 1
    lime, sliced
  • 1
    orange, sliced
  • 6
    haddock fillets
  • juice of 1 lemon
  • juice of 1 orange
  • 3/4
    cup
    white wine
  • 4
    Tbs
    chopped, fresh parsley
  • sea salt and freshly ground black pepper
  • 3/4
    cup
    sour cream (optional)
 

Method

15 mins
 
Preheat oven to 200.
Grease an ovenproof dish; pack the sliced fruit in a single layer.
Place the haddock on top of the fruit.
Mix together the orange juice, lemon juice and wine. Pour over the fish.
Sprinkle the parsley on top, flavour with salt and pepper.
Bake for 15 minutes.

Transfer the fish to another dish and keep warm.
Pour the cooking liquid into a sauce pan, bring to the boil, if you are using the sour cream, stir it in, otherwise reduce the liquid to about halve and pour over the fish.
