Citrus and chocolate-topped ice cream

Ingredients

    can mandarin slices, drained (reserve the syrup)
  • 50
    ml
    range marmalade
  • 30
    ml
    honey
  • 60
    g
    dark or milk chocolate, grated
  • 50
    ml
    vanilla ice cream, to serve
  • 30
    ml
    sunflower oil, for frying
  • 125
    ml
    good-quality mayonnaise
  • 50
    ml
    fresh coriander or parsley, chopped
 

Method

1. Place the mandarin slices in a shallow dish. combine the marmalade, honey and 60ml of the served syrup. Pour over the fruit and allow to marinate for 10 minutes.

2. Melt the chocolate in a glass bowl over gently simmering water, or in the microwave at a low temperature. Stir until smooth.

3. Serve the mandarin slices and sauce over vanilla ice cream and drizzle with the melted chocolate just before serving.
