Ingredients (8)

1.00 mandarin — tinned, slices
50.00 ml marmalade — orange
30.00 ml honey
60.00 g dark chocolate — or milk chocolate, grated
50.00 ml ice cream — vanilla, to serve
30.00 ml sunflower oil — for frying
125.00 ml mayonnaise
50.00 ml fresh coriander — or parsley, chopped

Method:

1. Place the mandarin slices in a shallow dish. combine the marmalade, honey and 60ml of the served syrup. Pour over the fruit and allow to marinate for 10 minutes.

2. Melt the chocolate in a glass bowl over gently simmering water, or in the microwave at a low temperature. Stir until smooth.

3. Serve the mandarin slices and sauce over vanilla ice cream and drizzle with the melted chocolate just before serving.
