    soft butter

    sugar

    extra-large eggs, lightly whisked

Method

Preheat the oven to 180 ºC and lightly butter the hollows of a muffin tin or spray with nonstick spray. Combine the ingredients for the topping and set aside. Sift the dry ingredients together. Beat the butter and sugar together until light and fluffy and beat in the eggs a little at a time. Beat until well blended and mix in the dry ingredients followed by the milk. Stir until just blended and turn the mixture into the prepared tin. Sprinkle generously with the topping mixture and bake in the centre of the oven for 15-20 minutes or until baked through and well-risen. Cool slightly, turn out and serve. Makes 12 muffins.
