Ingredients (9)

180.00 g butter — softened
160.00 ml castor sugar
3.00 eggs
250.00 ml flour — self-raising
125.00 ml flour — cake
10.00 ml cinnamon — ground
80.00 ml milk
2.00 apples — peeled, cored
30.00 ml brown sugar

Method:

1. Preheat oven to 180 ºC. Grease a deep, 20 cm diameter cake tin and line the base with greaseproof paper.
2. Cream together butter and castor sugar until light and fluffy. Add eggs and mix well.
3. Sift flours and half the cinnamon, and add alternately with milk to butter mixture.
4. Spoon mixture into tin and smooth surface. Cut apple halves into thin slices, place slices from each half on top of mixture, pressing lightly.
5. Sprinkle brown sugar and remaining cinnamon over cake, bake in oven for 45 minutes, or until skewer comes out clean when inserted in the centre of the cake.
6. Set cake aside for 3 minutes before turning onto a wire rack to cool. Dust with icing sugar before serving.
