Cinnamon apple cake

    orange (finely grated rind only)

Method

Preheat the oven to 180 ºC and lightly butter a medium-sized ovenproof dish or spray it with nonstick spray. Heat the butter in a pan and saute the apples until golden brown. Add the cinnamon, 15-30 ml sugar and the orange rind, mix lightly and spoon into the prepared dish. Place all the ingredients for the cake layer in a food processor and process to form a smooth batter (see tips). Spoon the batter on top of the apples, spreading evenly. Bake for 45 minutes until cooked and golden brown (the batter should be springy to the touch). Serve hot with thin custard or cream. Decorate with strips of fresh orange rind if desired. Serves 6.
