Cinnamon and nut rub for pork chops

    ml
    raisins
  • 375
    ml
    balsamic vinegar
  • 10
    ml
    brown sugar
  • 4
    pork chops
  • 30
    ml
    oil
  • 100
    g
    macadamia nuts, finely chopped
  • 10
    ml
    ground cinnamon
 

Method

 
Soak raisins in vinegar for 30 minutes. Simmer with sugar for 5 minutes. Brush pork chops with oil, then coat them in nuts and cinnamon. Grill for 5 minutes on each side, or until cooked (time depends on thickness of chops). Serve with raisin vinegar sauce, grilled leeks and potatoes tossed in wholegrain mustard. Serves 4
