Cinnamon and apple muffins

    wholewheat flour

    oat or wheat bran
  • 1

    salt

    bicarbonate of soda
  • 45

    brown sugar
  • 5
    ml
    ground cinnamon
  • pinch of ground cloves
  • 75

    raisins
  • 1
    medium apple, grated with peel
  • 250
    ml
    buttermilk or plain yoghurt
  • 60
    ml
    oil
  • 75
    ml
    honey
  • 1
    egg, slightly beaten
 

Method

 
1. In the mixing bowl of a food processor, mix together the flours, oats, salt, bicarb, sugar, spices, raisins and grated apple. 2. Combine remaining ingredients and add to the apple mixture. Mix at low speed to combine. 3. Spoon into well-greased muffin pans and bake at 180 ºC for 15 to 20 minutes. Remove muffins from pan and cool on a wire rack. Serve slightly warm.
