Cinnamon-and-apple muffins

    cinnamon

    wholewheat flour
  • 1
    large egg

    ml
    oil
  • 175
    ml
    plain low-fat yoghurt

    ml
    skim milk

    Granny Smith apples
 

Method

25 minutes
 
Place paper cups inside muffin baking-tins.
Sift together cake flour, baking powder, bicarbonate of soda and cinnamon. Stir in the wholewheat flour.
Beat together the egg and fructose until light in colour. Add oil, yoghurt and milk and mix well.
Make a well in the centre of the dry ingredients and fold in the liquid mixture. Stir in the apples gently.
Spoon mixture into prepared paper cups and bake in a preheated oven for 20 to 25 minutes, until well risen and browned.
