Cinnamon French toast

    lite Nestlé Ideal Evaporated Milk
  • 15
    ml
    sugar
  • 10
    ml
    ground cinnamon

    vanilla essence
  • 1
    large French loaf
  • 100
    g
    dried apricots, soaked and chopped
  • 60
    g
    butter
  • 60
    ml
    castor sugar
 

Method

 
1. Beat eggs, evaporated milk, sugar, 5 ml cinnamon and vanilla to blend. 2. Slice the bread 2,5 cm thick diagonal slices. Cut into the side of the crust of the slice to form a pocket. Place 10 ml of chopped apricot into each pocket. 3. Soak the bread slices in the milk mixture, turning to allow to soak on both sides. 4. Melt butter in a frying pan over medium heat. Fry bread on both sides until golden and cooked through, about 3 minutes per side. 5. Transfer to plates. Combine castor sugar with remaining cinnamon and sprinkle over toasts. Serve with golden syrup or maple syrup if desired. Serves 4
