Chunky couscous salad

    instant precooked couscous

    large red onion, finely chopped
  • 125
    ml
    sun-dried tomatoes, chopped, with juice
  • 65

    chopped Italian or ordinary parsley

    cloves garlic, crushed

    kidney beans, drained and rinsed
  • 410

    chickpeas, drained and rinsed
  • 85
    ml
    olive oil
  • 45
    ml
    balsamic vinegar
  • salt and milled pepper to taste
 

Method

 
Prepare couscous according to packet instructions. (Don't leave it in the water for too long, as it will turn to mush.) Rinse couscous in cold water and drain through a colander. Place remaining ingredients in a large serving dish and mix well. Add cooled couscous and mix well (preferably with your hands). Adjust seasoning, if necessary, and serve.
