    butter, softened

    light brown sugar
  • 45
    ml
    golden syrup
  • 5
    ml
    vanilla essence
  • 2
    eggs
  • 15
    ml
    milk
  • 50
    g
    ground almonds
  • 150
    g
    cake flour
  • 15
    g
    cocoa powder
  • 2
    ml
    baking powder
  • pinch of salt
  • icing sugar to dredge
 

Method

 
1. Preheat oven to 180 ºC. Using a small knife, slice the white and milk chocolate into small pieces and set aside. 2. In a large bowl whisk together butter, sugar, syrup and vanilla essence until light and fluffy. 3. Beat together the eggs and milk. Gradually whisk into the creamed mixture along with the ground almonds. Stir in the reserved chocolate pieces. 4. Sift flour, cocoa powder and salt together and fold in carefully. 5. Grease and flour a 18 cm x 28 cm rectangular cake tin and smooth the top with a spatula. Bake for 45 to 50 minutes until a skewer inserted in the centre comes out clean. Cut into squares once cool.
