A great use for leftover Christmas pudding.

Ingredients (3)

2 cup christmas pudding
2 tsp brandy — optional
100 g dark chocolate — or white chocolate, chips

Method:

Moisten pudding, if necessary, with brandy. Crumble to make a softish mixture. Roll small amounts of mixture into balls.

Break chocolate into a glass bowl and place over a pot of simmering water. Stir to melt.

Dunk truffle balls into melted chocolate (using a toothpick to keep fingers off chocolate) and place on wax paper to set, toss with cocoa, icing sugar or toasted coconut.

More good ideas:
– Stir crumbled Christmas pudding or cake into softened vanilla ice cream. Return to freezer. Use an ice cream scoop to scoop hardened ice cream into balls. Place on a paper-lined baking tray, drizzle with melted chocolate and return to freezer until ready to serve.

– Mix equal quantities of moist chocolate cake or muffins with fruit mince, and roll into balls.
