    currants
  • 60
    ml
    sherry
  • 150
    ml
    milk
  • 150
    g
    marshmallows
  • 5
    ml
    instant Nescafé coffee powder
  • 5
    ml
    cocoa
  • 50
    g
    maraschino cherries, finely chopped
  • 50
    g
    walnuts, finely chopped
  • 250
    ml
    cream, chilled
  • maraschino cherries and holly leaves for decoration
 

Method

Spray a 21 x 11 x 7 cm loaf tin with non-stick spray and line with wax paper. In a saucepan, combine the raisins, sultanas and currants with the sherry and heat until the fruit is soft and plump. Cool completely. Slowly heat the milk, marshmallows, coffee powder and cocoa until the marshmallows are melted. Sir well and remove from the heat. Cool. Add to the fruit mixture, add the maraschino cherries and walnuts and mix. Chill until the mixture just begins to set. Whip the cream until stiff and fold into the marshmallow mixture. Turn into the prepared loaf tin and freeze until needed. Slice and serve on a side plate. Decorate with cherries and holly leaves, if desired. Makes about 15 slices.
