    g
    small cubes stale bread
  • 500
    ml
    hot milk
  • 3
    eggs, separated
  • 60
    g
    sugar
  • 5
    ml
    cinnamon
  • 60
    g
    ground almonds
  • 410
    g
    can pitted black cherries, well drained (reserve the juice)
  • 80
    g
    melted butter
  • sugar for sprinkling
 

Method

Place the bread in a bowl and add the milk. Stir and leave to stand for 10 minutes. Press out the excess milk. Beat well until smooth. Add the egg yolks, sugar, cinnamon and ground almonds. Mix well. Gently stir in the cherries. Beat the egg whites until stiff and fold into the bread mixture. Melt the butter in a pan and drop spoonfuls of the batter in and fry on first side until the batter has set. Carefully turn and brown on the second side. Remove from the pan and sprinkle with sugar before serving. The reserved juice may be heated and thickened with a little cornflour and served as a sauce. Serves: 4-6
