Chorizo and tomato quiche

    quantity basic shortcrust pastry (see recipe)

    chorizo sausages, sliced
  • 250
    grated mozzarella cheese
  • pinch cayenne pepper
  • 1
    quantity basic egg custard (see recipe)
  • 1
    large ripe tomato, peeled, seeded and thinly sliced
  • 5
    dried origanum


Preheat the oven to 200 ºC and line a 30 cm quiche pan with shortcrust pastry. Bake blind as described. Stir-fry the sausages in a hot pan until fragrant. Sprinkle the mozzarella in the bottom of the pie crust and scatter the sausages on top of the cheese. Add a pinch of cayenne pepper to the egg custard and carefully pour into the pie crust. Arrange the tomato slices on top and sprinkle with the origanum. Bake for about 30-40 minutes until set. Leave to cool slightly and serve.
