Chops with herb and Parmesan crust

Ingredients (8)

6.00 potatoes — peeled and cut into chunks
4.00 garlic — cloves
125.00 ml peas — frozen
50.00 ml milk
50.00 ml butter
8.00 pork loin chops
100.00 ml fresh parsley — chopped
120.00 ml parmesan cheese — grated

Method:

Boil potatoes until almost tender. Add garlic and peas.
Cook until soft. Drain well and mash. Stir in the milk and half the butter and season to taste.
Season the chops and place on a baking tray. Cook under a hot grill for five minutes. Remove from heat and turn over.
Spread the uncooked sides with parsley and top with Parmesan. Dot the remaining butter on top. Return to the grill for a further five minutes until cooked though.
Serve with the mash and seasoned vegetables.
VARIATION: Use lamb chops or chicken breasts instead of pork chops.
