Ingredients (9)

8.00 pork — thick rib chops
15.00 ml oil
410.00 g tinned tomatoes — casserole
30.00 ml chutney — fruit
5.00 ml salt
freshly ground black pepper — to taste
1.00 ml dried mixed herbs — or fresh, chopped
15.00 ml dried parsley — or fresh, chopped
50.00 ml parmesan cheese — grated

Method:

Fry meat until brown in a heavy-based saucepan. Place a chop on the shiny side of a piece of aluminium foil. Heat tomato casserole, seasoning and cheese and spoon some on each chop. Seal well with foil and place parcel on hot coals for 30 minutes or bake at 160 ºC for 30 minutes.
Serves 4-6.
