Chops in a parcel

    pork thick rib chops, 20 mm thick
  • 15
    ml
    cooking oil
  • 410
    g
    can tomato casserole (ready-to-eat mixture of tomatoes, onions, green peppers and chilli)
  • 30
    ml
    fruit chutney
  • 5
    ml
    salt
  • freshly ground black pepper to taste
  • 1
    ml
    dried or chopped mixed fresh herbs
  • 15
    ml
    dried or 45 ml (3 T) chopped fresh parsley
  • 50
    ml
    grated Parmesan cheese
 

Method

 
Fry meat until brown in a heavy-based saucepan. Place a chop on the shiny side of a piece of aluminium foil. Heat tomato casserole, seasoning and cheese and spoon some on each chop. Seal well with foil and place parcel on hot coals for 30 minutes or bake at 160 ºC for 30 minutes. Serves 4-6.
