Ingredients (15)

250.00 g butter
300.00 g sugar
3.00 eggs — large
7.00 ml Bicarbonate of soda
10.00 ml water
420.00 g flour — white bread
30.00 g cornflour
2.00 ml salt
5.00 ml mixed spice — ground
5.00 ml cinnamon — ground
5.00 ml cloves — ground
5.00 ml ginger — ground
250.00 ml raisins — seedless, chopped, optional
200.00 g chocolate — melted
250.00 ml pecan nuts — chopped

Method:

1. Cream butter and sugar. Add eggs, one at a time, beating well after each addition.
2. Dissolve bicarbonate of soda in the water. Beat into butter mixture.
3. Sift flour, cornflour, salt and spices together into a large bowl. Add the raisins, if using. Fold into the butter and egg mixture until mixture is well combined.
4. Drop teaspoonfuls of the mixture on to greased baking sheets and bake in a preheated oven at 180 ºC for 15 to 20 minutes. Remove from the oven and allow to cool.
5. Dip biscuits into the melted chocolate to coat half of each biscuit. Decorate with chopped or whole nuts and leave on a baking rack to harden.
