Chocolate shortbread

    g
    cake flour
  • 20
    g
    cocoa powder
  • 45
    ml
    cornflour
  • 50
    g
    castor sugar
  • 100
    g
    butter
 

Method

 
Mix dry ingredients together. Rub in the butter with your fingertips until the mixture forms a dough. Knead well. Press into a greased 20 cm square baking tin. Prick all over with a fork. Bake in a preheated 170 ºC oven for 40 minutes until firm. Sprinkle with extra castor sugar and cut into squares or fingers. Cool on a wire rack.
