Chocolate sauce

    best-quality dark chocolate
  • 150
    ml
    milk
  • 30
    ml
    thick cream
  • 30
    g
    castor sugar
  • 30
    g
    unsalted butter, diced
 

Method

 
Melt chocolate in the top of a double boiler over boiling water and set over moderate heat, stirring from time to time. In a saucepan, bring milk, cream and sugar to boiling point, stirring gently with a whisk. Pour this mixture onto melted chocolate, stirring continuously. Return sauce to saucepan and let it bubble for 15 seconds. Remove from stove and beat in butter, a little at a time, until sauce is smooth and completely blended. Reheat for a second and serve warm. Makes about 400 ml (1 3/5 cups).
