Chocolate raspberry decadence

    g
    70% dark chocolate, chopped
  • 75
    g
    butter, chopped
  • 4
    eggs, separated
  • 250
    ml
    cream
  • 30
    ml
    icing sugar
  • fresh raspberries, to decorate
  • mint leaves, to decorate
  • cocoa powder to dust
 

Method

 
Place chocolate and butter in a saucepan and stir over a low heat until melted.
Pour the mixture into a bowl and add the egg yolks, one at a time, mixing until well combined.
Whip cream until soft peaks form.
Whisk egg whites in a clean bowl with a clean whisk until soft peaks form.
Sift in icing sugar and whisk until the mixture is thick and glossy.
Gently fold first the cream and then the egg whites through the chocolate mixture.
Spoon into bowls or greased rings, and chill for at least three hours.
Serve in cups or remove from rings.
Serve decorated with berries and mint leaves and dusted with cocoa powder.
