200.00 g dark chocolate — orange
30.00 ml orange liqueur
5.00 ml vanilla — essence
60.00 ml butter — unsalted, diced
4.00 eggs — jumbo, yolks only
60.00 ml sugar
3.00 eggs — jumbo, whites only

Method:

Heat chocolate, liqueur and vanilla essence over low heat until melted. Remove from stove and stir in butter, bit by bit.
Beat egg yolks and sugar until light and creamy, then fold in chocolate mixture while still warm.
Whisk egg whites until soft peaks form. Gradually fold a third of egg whites into chocolate mixture, using a metal spoon, then carefully fold in remainder, stopping when white flecks disappear. Do not overmix.
Pour mousse into 1 large or 4 individual bowls and chill for 6 to 8 hours.
Serve with a dollop of thick cream.
