Chocolate nut cookies

    butter
  • 30
    ml
    cocoa
  • 125
    ml
    icing sugar
  • 125
    ml
    peanuts, roughly chopped
  • 500
    ml
    self-raising flour
 

Method

Preheat the oven to 180 ºC (350 ºF). Spray a baking sheet with non-stick spray or line with baking paper. Beat the butter, cocoa and icing sugar together. Mix in the peanuts. Add small quantities of the self-raising flour and mix well to form a manageable dough. Add more self-raising flour if necessary. Roll the dough into small balls. Arrange on the prepared baking sheet. Flatten slightly with a fork and bake for about 15-20 minutes or until done. Cool slightly on the baking sheet before transferring to a wire rack to cool. Store in an airtight container. Makes 40 cookies.
