Chocolate mousse filling

  • 200
    g
    dark chocolate
  • 500
    ml
    white wine
  • 30
    ml
    brandy
  • 5
    ml
    vanilla essence
  • 5
    eggs, separated
  • 45
    ml
    castor sugar
  • 15
    ml
    lemon juice
 

Method

 
1. Place chocolate and wine in the upper part of a double boiler and steam over boiling water. 2. Add brandy and vanilla essence. Remove from the heat and stir continuously until mixture just thickens. Allow to cool slightly. Gradually whisk in egg yolks. Cool completely. 3. Beat egg whites, gradually adding sugar and lemon juice. Fold 1/3 of beaten egg white into chocolate mixture, blending well. 4. Carefully fold chocolate mixture into remaining egg white. Chill for at least 3 hours before using to fill the chocolate mousse cake (see recipe).
