Ingredients (12)

310.00 ml butter — or margerine
500.00 ml sugar
2.00 ml salt
5.00 ml vanilla — essence
4.00 eggs
750.00 ml flour — cake
20.00 ml Baking powder
20.00 ml cocoa powder
250.00 ml milk
CHOCOLATE GLACÉ ICING
125.00 ml icing sugar
15.00 ml cocoa powder
water — boiled

Method:

1. Preheat oven to 180 ºC. Grease two 22 cm cake tins.
2. Beat butter, sugar, salt and essence together until light and fluffy.
3. Add beaten eggs and mix well. Sift together the dry ingredients and fold into the butter mixture alternately with the milk. Stir until well blended and smooth.
4. Turn batter into prepared tins and bake for 20 to 30 minutes.
5. Sandwich together with chocolate mousse filling (see recipe).
6. To make chocolate glacé icing, sift together icing sugar and cocoa. Add just enough boiling water to make the mixture runny, but not too watery. Spread over the top of the cake. Chill in refrigerator before serving.
