Chocolate mousse

  • 30
    cocoa powder
  • 200
    milk or dark chocolate, coarsely chopped
  • 150
    pink and white marshmallows
  • 1
    can evaporated milk, well chilled


1. Mix the cocoa with 80ml hot water in a glass bowl. Stir in the chocolate and the marshmallows. Microwave on a medium heat for 30 seconds. Remove from the microwave and stir. Repeat until the mixture is smooth and everything has melted, then set aside to cool.

2. Whip the evaporated milk until light and frothy, and fold gently into the chocolate mixture. Pour into glasses and allow to set for one hour. Top with fresh cream and fruit or berries.
