Chocolate mounds

    butter

    extra-large eggs

    sugar
  • 700
    ml
    coconut
  • 75
    ml
    shredded citrus peel
  • 100
    g
    coarsely chopped dark or milk chocolate
 

Method

12-15 minutes
 
Preheat the oven to 160 ºC (325 ºF). Line a baking sheet with baking paper. Melt the butter and tool slightly. Whisk the eggs and sugar together until light and foamy. Add the butter and remaining ingredients to the egg mixture and mix well. Leave for 15 minutes. Spoon small amounts of the mixture into a small cup with a rounded base and turn out onto the baking sheet. Alternatively, shape the mixture into balls and arrange on the baking sheet. Bake for 12 to 15 minutes or until the mounds just begin to change colour. Cool slightly (the mounds will still be soft) before transferring to a cooling rack with an egg flip.
