  • CRUST

    Tennis biscuits
  • 30
    ml
    butter, melted
  • FILLING
  • 80
    g
    lime jelly
  • 200
    ml
    boiling water
  • 380
    g
    Nestlé Caramel Treat
  • 250
    g
    smooth cottage cheese
  • 250
    ml
    cream, stiffly whipped
  • 150
    g
    mint chocolate (such as Peppermint Crisp), grated
 

Method

 
Spray a 26 cm pie dish with non-stick spray. Crush the Tennis biscuits and mix with the butter. Line the base and sides of the pie dish with the crumb mixture. Chill until needed. Dissolve the jelly powder in the water, stirring until dissolved. Cool slightly. Add the caramel condensed milk and mix well. Add the cottage cheese and fold in the cream. Mix in half the chocolate and turn the filling into the prepared crust. Sprinkle the remaining chocolate on top. Chill until set. Makes a large tart.
