5.00 eggs — extra-large
5.00 eggs — just the yolks
150.00 ml castor sugar
250.00 g nestlé easymelt chocolate — dark, chopped
250.00 g butter — unsalted
65.00 ml maize meal
25.00 ml flour — cake
cocoa powder — for dusting muffin pans

Method:

Preheat the oven to 200 ºC. Butter the muffin pans and dust with cocoa powder. Beat the eggs, egg yolks and castor sugar until thick and fluffy. Melt the chocolate and butter together in a double boiler over boiling water or in the microwave oven. Add slowly to the egg mixture. Sprinkle the mealie meal and cake flour over the mixture and fold in. Fill each muffin pan three-quarters full. Bake for 10-15 minutes until firm to the touch. The inside should still be runny. Turn out onto a side plate and cut one side open. Serve immediately with a variety of fresh berries or strawberries and a dollop of cream mixed with plain yoghurt. Sieve castor sugar on top.
Makes about 25-30.
