25.00 ml almonds — flaked
180.00 g butter
170.00 g castor sugar
3.00 eggs — extra-large, lightly beaten
75.00 g flour — cake
75.00 g flour — self-raising
2.00 ml Baking powder
1.00 ml salt
15.00 ml cocoa powder
15.00 ml milk
15.00 ml vanilla — essence

Method:

Preheat the oven to 180 ºC (350 ºF). Grease a 21 cm ring cake tin with butter or margarine and sprinkle the almond flakes or nuts in the bottom of the tin. Cream the butter and castor sugar together until light and creamy. Add small quantities of the beaten egg at a time, beating well after each addition. Sift the cake flour, self-raising flour, baking powder and salt together and fold into the butter mixture. Divide the batter in half. Sift the cocoa into the one half of the batter and mix well. Add the milk if the batter seems too stiff. Add the vanilla essence to the other half and mix well. Turn half the vanilla batter into the prepared tin. Spoon half the cocoa batter on top. Repeat the layers once more. Using a metal spoon or spatula make spirals in the batter to create the marble effect. Bake for 30-40 minutes or until a testing skewer comes out clean when inserted into the centre of the cake. Cool slightly in the tin before turning out onto a wire rack to cool completely. Dust with a little icing sugar just before serving.
Makes a small cake.
