Chocolate fridge cake with raisins

    dark chocolate, coarsely chopped
  • 50
    g
    butter
  • 150
    ml
    cream
  • 225
    g
    digestive biscuits, coarsely chopped
  • 125
    g
    mixed nuts, chopped
  • 200
    g
    seedless raisins, soaked in
  • 45
    ml
    brandy (optional)
  • cocoa powder for dusting on top
 

Method

 
Grease a 20 cm cake tin and line with wax paper.
Slowly melt the chocolate and butter over very low heat, stirring frequently until smooth.
Remove from the heat and set aside to cool slightly.
Whip the cream until soft peaks form and fold in the melted chocolate, biscuits, nuts, raisins and brandy (if used).
Turn the mixture into the prepared cake tin, cover with plastic wrap and chill for at least 4 hours.
Turn out onto a pretty platter and serve dainty slices with after-dinner coffee.
