Ingredients (6)

150.00 g dark chocolate — broken into pieces
20.00 small paper cups (more or less)
FILLING
250.00 g dark chocolate — broken into pieces
60.00 g butter
175.00 ml cream
5.00 ml brandy

Method:

1. Place the chocolate pieces for the cups in a glass bowl and microwave for 1-2 minutes or until the chocolate has melted. Stir at 30 second intervals with a wire whisk because the chocolate normally retains its shape even if it’s melted inside. Don’t overheat the chocolate as it may become scorched.
2. Brush the inside of the paper cups evenly with melted chocolate and chill to set. Chill overnight if possible as it will be easier to remove the paper cups without breaking the chocolate.
3. Carefully remove the paper cups, taking care not to break the chocolate.
4. Place the chocolate, butter and cream for the filling in a glass bowl and microwave for about 2 minutes or until the mixture has melted. Stir at 30-second intervals to prevent the mixture from scorching. Add the brandy and chill the mixture for at least an hour or until it thickens.
5. Fill a piping bag with the filling mixture and pipe the filling into each chocolate cup. Chill until just before serving.
Makes about 20 chocolate cups.
