Preheat oven to 160 °C.
Place the butter, vanilla essence and sugar in the bowl of an eletric mixer and beat until creamy.
Beat in the eggs and then fold in the flours, cocoa powder, coconut and chocolate.
Place level 65 ml amount of the mixture on a baking paper lined baking sheet and bake for 12 - 15 minutes or until the bases are lightly browned. Allow to cool and sandwich together with filling.
Serve warm or cold with hot chocolate.
